Foodie Friday: Breakfast Monte Cristo

Foodie Friday

I LOVE to cook! I also love to eat. Recently I joined Weight Watchers and found that food could still be delicious even if it was on a *shudders* diet. I decided that I wanted to share some of the awesome recipes that I have found and tried with you. Books and food often go hand in hand (but NEVER in the same hand!) Each week I will share the recipe and my own pictures so you can see what it looks like when an average joe makes it. 😉

This week I present:

Breakfast Monte Cristo

I found this recipe on Drizzle Me Skinny when I was looking desperately for anything to eat besides eggs for breakfast. I LOVE them. 🙂 Instead of asiago cheese I used a piece of fat free Swiss cheese. It was still pretty yummy and came in at only 5 SP for one.

The Breakfast Monte Cristo from Drizzle Me Skinny was delish! Click To Tweet

I bet they’d probably freeze pretty well too but I haven’t tried this yet. I may do so in the future. 🙂

I think part of my problem is I let myself be led by traditional breakfast foods. If I stopped focusing on just what you’re “supposed” to eat, I’d probably be able to come up with thousands of ideas!

Fajitas would be awesome for breakfast! I don’t have anything against eggs but I have to change it up. I get bored with my food easily.
