Foodie Friday: Spicy Marinara Spaghetti Squash

I LOVE to cook! I also love to eat. Recently I joined Weight Watchers and found that food could still be delicious even if it was on a *:shudders:* diet. I decided that I wanted to share some of the awesome recipes that I have found and tried with you. Books and food often go hand in hand (but NEVER in the same hand!) Each week I will share the recipe and my own pictures so you can see what it looks like when an average joe makes it. 😉

This week I present:

Spicy Marinara Spaghetti Squash

This one is one of my recipes that I just tossed together. It goes a little something like this:

  • One spaghetti squash
  • One can Italian spiced crushed tomatoes
  • Spices of preference. I used black pepper, garlic powder, crushed red pepper flakes, and sriracha.
  • Turkey meatballs
  1. Half spaghetti squash lengthwise. Remove the seeds.
  2. Place aluminum foil on a cookie sheet (make a boat of the foil to keep it clean!). Place a small bit of water on the foil; just enough to cover the surface. Place both halves of the squash open/cut side down. The squash should be tender.
  3. Bake squash at 350 degrees for 40 to 60 minutes depending on the size of your squash.
  4. Let the squash rest for 10 to 20 minutes. Then string the squash by running a fork through the flesh of the squash.
  5. Mix crushed tomatoes and preferred spices and simmer on the stove top.
  6. Warm turkey meatballs in the microwave.
  7. Add sauce and meatballs to squash and enjoy!

      The only problem was that I made it TOO spicy for leftovers. I ate the first half and it was great but when I got back to it a couple of days later it was inedible because of the spice. 🙁

      I love it too! I also love that it doesn’t cost me any points as it’s a vegetable. I need to make it again real soon. It was SO good. 😀
