I LOVE to cook! I also love to eat. Recently I joined Weight Watchers and found that food could still be delicious even if it was on a *:shudders:* diet. I decided that I wanted to share some of the awesome recipes that I have found and tried with you. Books and food often go hand in hand (but NEVER in the same hand!) Each week I will share the recipe and my own pictures so you can see what it looks like when an average joe makes it. 😉

This week I present:







Chicken Salad Croissants

This is something I made up and just added ingredients as I went. It worked out to 9 SP for the chicken salad and I used my WW app and went with a generic croissant at 9 SP (to be safe). 18 SP can be a lot of points in one shot but I was REALLY craving a good chicken salad sandwich. I also say if you have the SP and you’re satisfied with your choices you don’t have to justify to anyone! 😉

Ingredients:
3 oz cooked boneless skinless chicken breasts (shredded) – 2 SP
Red Grapes (to taste) – 0 SP
1 1/2 T Unsalted Pecan Halves – 2 SP
4 T Hellman’s Light Mayonnaise – 5 SP
1 t dried minced onion – 0 SP
1/2 t celery seed – 0 SP
1 pinch salt – 0 SP’
1 pinch black pepper – 0 SP
—————————-
1 croissant (I got mine from Sam’s)
1 butter lettuce leaf

Mix ingredients together in a bowl. Assemble sandwich.
