Foodie Friday: Turkey Roll Ups

Foodie Friday

I LOVE to cook! I also love to eat. Recently I joined Weight Watchers and found that food could still be delicious even if it was on a *shudders* diet. I decided that I wanted to share some of the awesome recipes that I have found and tried with you. Books and food often go hand in hand (but NEVER in the same hand!) Each week I will share the recipe and my own pictures so you can see what it looks like when an average joe makes it. 😉

This week I present:

Turkey Roll Ups




Ingredients:
1/4 Avocado
1 Scallion
2 Tbsp Hummus
2 oz Deli Turkey

Instructions:
1. Assemble as follows: Turkey for your base, spread hummus over turkey, top with scallion and avocado.
2. Roll up and eat!

These are great for a quick satisfying lunch. 🙂 Using the ingredients I had these were 7 SP for 2. I always suggest checking your own ingredients as so many can vary from brand to brand.

      I’ve also done them before with lettuce and made them lettuce wraps. You could add a few strips of bell pepper and it would add a bit of snap.
